n April 2019, we opened KIZU process center on the premises of Osaka Kizu Wholesale Market. We utilize how-how for distribution processing and production process contracting cultivated by the KONOIKE Group to provide a one-stop service for multiple processing steps, such as cutting, boiling, frying, steaming, and seasoning, and advanced rapid freeze processing for Japanese food ingredients (agricultural and fishery products). Thus we support sales to Japan-based mass retailers and restaurants, as well as overseas exports.

    We provide a one-stop service for a variety of processing steps (such as cutting, boiling, frying, steaming, and seasoning) for numerous different food ingredients, as well as rapid freeze processing that enables to preserve a “live fish” level of freshness.

    We carry out thorough hygiene control with safety as our top priority in all steps, from packing through to packaging.

    The process center is located close to a major consumer region at the heart of Osaka City, and is also close to the Port of Osaka and Kansai International Airport. Introducing the state-of-the-art mechanized equipment to enable safe and secure supply of high-quality and fresh food products

We have introduced "HybridICE" (*1) icemaker to enable rapid freezing. This has allowed us to achieve deliveries to various locations while preserving a “live fish” level of freshness. Moreover, introducing the state-of-the-art mechanized equipment has allowed us to fully automate everything from descaling of fishery products through to fish filleting and skin removal. We provide a stable supply in addition to high-quality food processing.

(*1) Sherbet-like ice at -21.3°C, facilitating the ikejime method for instant killing of live fish.

Handling various processing treatments, from heating processes such as boiling, frying and steaming, through to the preparation of dishes

We introduced fully automated oven equipment to enable efficient heating processes. We also handle the preparation of seasoned food, reproducing the refined flavors of Japanese cuisine from within our factory. This allows us to deliver high-quality and delicious Japanese food to the rest of the world.

Introducing mechanized equipment to reduce dependence on people, prioritizing the design for safety

We carry out management with safety as our top priority in all steps, from packing through to packaging. We are aiming to obtain HACCP (*2) certification in two years’ time. HACCP is gradually becoming the global standard, against a backdrop of increasing globalization of food products.

(*2) Hazard Analysis and Critical Control Point; HACCP is food hygiene control system in which Food Business Operators (FBOs) assess hazards such as contamination of pathogenic microorganisms, foreign objects etc. throughout the process from receiving raw materials to shipping final products, and control the process focusing on the critical steps to remove or reduce these hazards to an acceptable level.
